The week leading up to Memorial Day is one of my favorites—it signals the unofficial start of summer, and around here, that means more sunshine, more park days, and more reasons to share good food with good people.
This year, my husband and I are carving out time for a little Date Day in the Park, and we’re calling it Cheeze & Chill. Just us, a picnic blanket, a couple of cold sparkling mountain waters, and a spread of snacks that are easy, nostalgic, and surprisingly healthy.
If you’re like me—always juggling a million things and craving connection without the fuss—this kind of low-key outing is the perfect reset. Whether it’s with your partner, your best friend, or your kids, getting outside with food that makes you feel good (not heavy or sluggish) is a simple way to make memories and stay grounded.
So what’s on our picnic menu?
Let’s talk Credo Cheeze Spray. It’s not just for crackers (though we’ll definitely be bringing some of those). One of our favorite ways to use it lately? Sprayed on cool cucumber rounds with a sprinkle of chili flakes. It sounds simple—and it is—but it hits that crunchy, creamy, salty-spicy sweet spot that’s hard to beat.
We’ll also pack date bites and fresh fruit—because what’s a picnic without something sweet? Dates stuffed with nut butter and sprinkled with cacao nibs or coconut flakes are a go-to for us. They feel indulgent but are naturally energizing and satisfying.
And of course, Credo Queso is coming along too. Whether we bring it chilled as a dip or warm it up to pour over nachos, it’s a non-negotiable. If you’ve never tried it in a layered dip situation (refried beans, pico, guac, a drizzle of queso…), you’re seriously missing out.
Now, let’s zoom out to Memorial Day weekend. It’s a time for gathering, remembering, and celebrating—with food front and center. And yes, you can totally keep it festive and healthy.
Here’s how we’re approaching our holiday spread:
-
Grill up some plant-based hot dogs with all the classic toppings. We like toasted buns, mustard, pickles, and yes, even a little Cheeze Spray on top.
-
Add grilled veggie skewers—zucchini, bell peppers, mushrooms, and red onions brushed with olive oil and herbs.
-
Put out a dip station with Credo Queso, hummus, and salsa alongside crunchy veggies and baked chips.
-
Finish it all off with those date bites, watermelon slices, and citrus sparkling water over ice.
We’re not here to food-shame anyone. If you want to indulge, do it! But I’ve found that keeping a few clean, nourishing staples on the table makes everyone feel better the next day—kids, parents, and guests included.
The heart of this weekend, for us, is about slowing down, being present, and remembering the joy of simply sharing a meal outside. No screens, no rush, just good vibes and better food.
So if you’re feeling the pressure to plan something elaborate—don’t. A few delicious plant-based bites, your favorite people, and a little sunshine go a long way. Whether you’re headed to the lake, firing up the grill, or just laying out a blanket in your backyard, I hope you take a moment to cheese, chill, and enjoy.
Happy Memorial Day,
